Open-Faced Swiss Burger with Flower Salad and Blistered Tomatoes

The idea started out simply to serve my grilled burgers with less carbs and more greens…and yellows, reds, oranges, pinks, and purples. And while there is nothing particularly extraordinary about a hamburger with lettuce and tomato, who wouldn’t be delighted with this vibrant presentation?

Method

Toss grape tomatoes with olive oil. Roast at 350°F until blistered. Season with salt. Set aside.

Grill burgers to your liking. Meanwhile, slice crusty French bread and brush both sides with olive oil. When the burgers are almost done, grill the bread on both sides. Top warm bread with a slice of Swiss cheese.

Place the open-faced burger in the middle of a plate. Shower with mixed field greens and edible flowers. Place tomatoes around the lettuces.

Drizzle olive oil and aged balsamic vinegar over the salad. Season with salt and fresh ground pepper.

Adding to the flower repertoire are these fabulous grilled onion tulips, taking “burger + grilled onion” to another level.

To make grilled onion tulips – slice the root tip off the end of the knob variety, then make three incisions through the bulb, leaving the green stem intact. Smash the bulb with the flat blade of the knife. Grill until nicely charred.

How To Make Grilled Onion Tulips

Dress the grilled onion tulips with olive oil, aged balsamic vinegar, salt and pepper.
