Caesar Cardini Chicken Club
“I am probably one of the few people around who saw the real Caesar Cardini making his salad.
I was about 9 when my parents took me to Tijuana, just the other side of the border from San Diego.
They were so excited when big jolly Caesar himself came to the table to make the salad, which had already been written up and talked about everywhere. And it was dramatic, I remember most clearly the eggs going in, and how he tossed the leaves so it looked like a wave turning over.”

Caesar Cardini Chicken Club Recipe
Chicken Burgers (makes 3)
- 1/2 lb. freshly ground chicken thighs
- 1/3 c. panko breadcrumbs
- 2 T. finely chopped onion
- 1 egg
- 2 t. dijon mustard
- 1 t. worcestershire sauce
- salt & pepper
Mix all ingredients together, let stand at room temperature for 15 minutes. Form chicken mixture into patties. Sauté in a non-stick skillet in canola oil over medium-high heat, turning once, until the chicken is completely cooked but taking care not to overcook.
Sourdough Garlic Toast
- sourdough bread
- garlic clove
- olive oil
Toast bread until golden brown. Rub the toast with a garlic clove then brush with olive oil.
Ingredients
- sourdough garlic toast
- chicken burgers
- caesar aioli
- romaine lettuce
- hard boiled egg slices
- boquerones
- parmesan cheese
Caesar Aioli
- 1/2 c. mayonnaise
- 1 large garlic clove, minced
- 2 t. worcestershire sauce
- 3 oil cured anchovy fillets, finely chopped
- fresh ground pepper
Simply mix all the ingredients together.
Boquerones (White Anchovies)
Boquerones are anchovies that have been cured in vinegar. After about 12 hours the vinegar will have turned the anchovy flesh white. It is drained off and the anchovies are stored in olive oil. For this club sandwich, I season them with a little squeeze of lemon.
Assembly
- Spread caesar aioli on one side of three pieces of toast.
- Top one piece of toast with a chicken burger.
- Grate parmesan cheese over the burger.
- Top the cheese with romaine lettuce.
- Top the second piece of toast with lettuce, hard boiled egg slices, and boquerones.
- Stack the “boquerones toast” on top of the “burger toast.”
- Finally, cover with the third slice of toast, aioli-side down to complete the club sandwich.

Love that you addressed all the flavors of the classic caesar salad (including the anchovies!) and chose to make a nice juicy thigh meat chicken burger over a grilled breast. I could almost taste it.
A story I did not know, a mega sandwich I like enough to copy . . . but with respects to Julia Child, anchovies yes, please 🙂 !

Anchovies make everything taste better, so he knew what he was doing and wow, what a sandwich. How many people ate this? I love the dedication you put into it.
Just looking at the chicken made my mouth water and my husband ask that I make him this sandwich…a delight!
