P.S.:
My daughter wished for, and got,
Pho Bo, the Vietnamese Beef Noodle Soup, on her birthday. I would have never thought of cooking it for a summer meal, but it turned out to be quite ingenious for the season. I prepared the broth and all the veggies the day before, which made for an easy assembly and a not so hot kitchen on the day I served it. Everybody loved it, because it is actually quite a light meal for a hot day.
