Pineapple Peanut Coleslaw Alfresco

Summer is here! YAY! Time for alfresco dining.

One of the side dishes that was a hit at this alfresco meal was
The Pineapple Peanut Coleslaw.

Nothing fancy, but this combination of ingredients is a winner.

A small can of crushed pineapple is drained.

Napa cabbage is thinly sliced.
The crinkled leaves give a good texture to coleslaw.

Sliced scallions and cilantro are added.

Equal parts of mayonnaise and sour cream are blended together with pineapple.
Add peanuts and toss. Season with salt and pepper.

Let’s eat!
Where’s the beef?

We’re looking forward a long summer with plenty of grilling and outdoor dining ahead.

How ’bout you?

  1. There are few things better than dining al fresco on a Southern California summer’s eve – although a good steak and this slaw would certainly enhance it! Ah, how I miss So. Cal. LL, what wine did you serve? – FA

  2. Your table looks wonderful al fresco, the food amazing, the coleslaw is a must try! What a great combo of ingredients!

  3. HI Simona – thank you, and same to you.

HI FA – Happy Birthday!!! We miss you too.

Thanks Marie – I love setting up the table outdoors, and cutting some roses from my garden for the table.

Hi Paula – Welcome! Thank you and I’m off to visit yor site.

  4. Oh your coleslaw looks wonderful! I love that Asian twist you give it. My Granny made the best coleslaw & I know she would have loved this one. I can’t wait to try it.
