Strawberry Caprese Salad with Burrata

Not that our favorite Caprese salad (tomatoes, mozzarella, basil and olive oil) needed any improvement, but here, the classic savory summer salad is transformed by adding sweet strawberries & balsamic syrup. The combination is stellar.

Super-juicy and seductively aromatic, strawberries highlight the what is most memorable about this time of year’s produce. Tomatoes and strawberries have a curiously delightful affinity for each other. A light drizzle of aged balsamic vinegar adds a touch of sweet acid that brightens the entire dish. Creamy rich burrata takes the mozzarella to the next level.

By choosing only the best ingredients – fresh picked Italian basil, the juiciest most flavorful heirloom tomatoes, ripest organic strawberries, and high quality olive oil & aged balsamic vinegar – this salad can stand alone as a most satisfying evening meal. Serve with a good chilled rosé, and this dinner more than anything will evoke the pure taste of the season. No better way to enjoy a hot summer evening…

Sorry but I really am tired of the Caprese Salad and all its incarnations. Caprese grilled cheese, caprese kabobs, caprese bruschetta, caprese pasta salad, caprese pizza, caprese schmaese. But when I saw a photo of cherry tomatoes paired with cherry-sized mozzarella and edible flowers from a restaurant called “Salt” I just had to make my own version. The idea of the colors alone had me hooked.

After all, there truly is something magical about the classic pairing of tomato and mozzarella and basil. Especially in summer. And of course, with limited ingredients in the dish, the best quality of each component is required. Heirloom cherry tomatoes from the farmers market. Flowers and herbs from my own garden. Balsamic vinegar, gran riserva.  Fresh mozzarella crafted in the Italian style. My favorite fruity olive oil from California Ranch.

Capture Summer in a Little Glass Jar

Tomato Water Gelée, Burrata Cheese
Olive Oil, Chiffonade of Basil

Fans of the ubiquitous Insalata Caprese made with fresh buffalo mozzarella, tomatoes, basil, and olive oil will go wild over our unique Caprese Verrine. Freshly extracted tomato water combined with sea salt and gelatin when chilled, creates a smooth gelée that melts on the tongue tasting of pure tomato flavor, and pure summer heaven! Layered with chopped burrata – fresh mozzarella stuffed with “rags” of mozzarella and heavy cream with all its wonderful delicate creamy, sweet, sour, and earthy flavors. Finished with fresh basil from the garden and our favorite fruity olive oil from California Olive Ranch – this little 2 oz. verrine is our new darling for summer entertaining.

We served the Caprese Verrine as the amuse bouche at our recent Sunken City Supper Club event, “Mediterranean on the Pacific.” It was a fabulous start to an amazing al fresco summer dinner…
