Drizzle equal amounts of low-sodium tamari and olive oil over veal chops. Coat well. Let sit at room temperature 30 minutes, turning occasionally. Season with a good amount of kosher salt and fresh ground pepper before grilling.

Place on a very hot grill and close the lid. Turn after 4 minutes. If getting too charred, move to an area of indirect heat. Grill another 4 minutes. Let rest 5 to 10 minutes before serving.

This method results in veal chops cooked to “charred-medium” where the exterior has a delicious crackle and the interior is a juicy pale pink with a velvety texture. As always, adjust cooking time to your personal preference.

While the veal chops are resting, grill the baby broccoli.

Toss trimmed baby broccoli with olive oil, salt and pepper. Place in a single layer in a grill basket and grill over high heat with the lid closed for 4 minutes, or until lightly charred and crisp-tender. No need to turn.
