I’m preparing Chicken Soup in memory of my Nana and in celebration of the Jewish New Year. And of course, my chicken soup for the High Holy Days will include matzoh balls. These saffron matzoh balls are richly-colored and exotic-tasting. The bright metallic flavor of saffron conjures up memories of foods from far away places. Their striking golden hue brings an element of surprise and beauty to the holiday table. The heady spice derived from the dried stigmas of a crocus, evokes interest and is powerfully irresistible.

Saffron Matzoh Ball Recipe
Everything You Need To Know To Make The Best Matzo Balls

Grind 0.02 oz. saffron threads using a mortar and pestle.

Blend 2 large eggs with 2 T. good olive oil. Stir in saffron.

Let saffron infuse the egg/oil mixture for about 10 minutes. Stir again.

Add one packet (2 1/2 oz.) matzoh ball mix. Mix well.

Place matzoh ball mixture in refrigerator for 15 minutes.

In the meantime bring a large pot of water to a boil.

Roll chilled matzoh ball mixture into 12 balls.

Drop balls into boiling water. Cover. Lower the heat to medium low.

Cook for 20 minutes, do not lift lid while cooking (no peeking)!

Slice carrots and parsnips on the bias.

Cook in boiling salted water for about 5 minutes until tender.

Place carrots and parsnips in warm shallow bowls.

Add matzoh balls then ladle hot chicken soup into the bowls.

Garnish with fresh parsley and dill.

  1. Happy New Year to come Lori!! Wonderful version of the ubiquitous Yiddishe Momma’s chicken soup which does cure all!! Have never added saffron: oh yes, shall try!! Now imagine a Shiksa gal going thru’ a uni matriculation high school class with some 13 Jewish gals . . . imagine same with two daughters born later September and October . . . when could one fit in THAT b’day party! . . . methinks you get my idea . . . and yes, I did have ‘two kitchens’ for the occasions and it was appreciated . . . love the look of your matzo ball mix . . .
