Non-Fat Greek Yogurt with Roasted Oatmeal “Streusel” 

There are those of us who try to eat oatmeal everyday for its heart-healthy benefits. And truthfully, that oatmeal routine can get quite boring. But here, old dull oatmeal becomes an inviting way to begin an awesome day. The idea for this “streusel” comes from energy-packed breakfast bars. It’s kind of like a deconstructed breakfast bar on top of yogurt. And roasted oatmeal is a nice change from the “wet” version.

By the way, do you think having to eat bacon everyday could get boring too? Hmmm…

Non-Fat Greek Yogurt with Roasted Oatmeal “Streusel” RECIPE

Roasted Oatmeal "Streusel"

  • 2 c. old-fashioned rolled oats
  • 3/4 c. raw almonds
  • 1/3 c. raw sunflower seeds

Roast ingredients on a baking sheet at 350° until toasted, about 9 to 10 minutes. Let cool.

Roasted Oatmeal "Streusel"

  • 1/4 c. each, dried fruits (apricot, cranberry, blueberry)
  • 1/4 c. roasted pistachio nuts, chopped
  • 1/2 c. grape nuts cereal
  • 2/3 c. organic peanut butter
  • 1/4 c. agave syrup
  • 1 t. vanilla extract
  • salt to taste

Transfer roasted oatmeal mixture to a large bowl.  Add fruits, pistachios, and grape nuts and toss to combine. In a small bowl, combine peanut butter, agave syrup, and vanilla. Using your hands incorporate the wet ingredients into the oatmeal by crumbling the mixture through your fingers, like making a streusel topping. Season with salt to taste.

To serve: Place a portion of non-fat Greek yogurt in a shallow bowl. Top with Roasted Oatmeal Streusel and a drizzle of agave syrup or honey.

Store Roasted Oatmeal Streusel at room temperature, tightly covered, for up to one week.

  1. I love your roasted oatmeal streusel and could eat that at least 5 days a week. I eat plain cooked oatmeal but putting your roasted oatmeal streusel on top would really take breakfast over the top. Take Care, BAM

  2. This is very timely, I like Oatmeal, I eat it regularly, most mornings in fact, but it’s become kind of like a duty – A take your vitamins thing. . This is a real treat, better than Bacon.

  3. breakfast can get mechanical whatever it is you’re eating, even bacon. I think it’s just the hour of the day and the time-constraint that make it that way. On a weekend, with no reason to wolf it down and dash out of the house, whatever you’re eating is more enjoyable, and providing the Greek yogurt is thick and fresh, the honey is sweet and flavorful, even boring, old regular oatmeal can be pretty good. That said, when you’ve got the extra time, why not roast the oatmeal?
