Even if you are not among those of us who crave kimchi on a regular basis, you may still find this omelette irresistible. Korea’s most celebrated pickle dish – kimchi – is super flavorful! Here, napa cabbage kimchi’s zingy fermented flavors are balanced by light fluffy eggs, melting cheddar and rich sour cream. The result is an omelette that is tangy, spicy, even a bit crunchy. A real eye-opener. Good morning! Breakfast. Is. Served.

Kimchi & Cheddar Omelette Recipe

Kimchi & Cheddar Omelette

Ingredients for 1 Omelette:

  • 1 t. toasted sesame oil, divided
  • 1 scallion, white and pale green part, sliced
  • 1/2 c. napa cabbage kimchi, rough chopped
  • 3 eggs, beaten and seasoned with salt and pepper
  • 2 slices sharp cheddar cheese

Kimchi & Cheddar Omelette

Heat a small sauté pan over medium-high heat. Add 1/2 t. sesame oil, then add  scallion rings, cook for about 1 minute then add kimchi. Cook, stirring until kimchi starts to brown, about 2 minutes.

Meanwhile, heat a small non-stick pan over medium heat. Add 1/2 t. sesame oil. Swirl the oil around the pan then add the eggs. (For the fluffiest omelette, be sure to beat the eggs just before adding them to the pan). Cook the eggs, gently lifting the edges with a spatula, so the uncooked egg flows under the cooked egg. This method makes a wonderful fluffy omelette with a tender and creamy center (it looks like a flower). When the eggs are almost cooked through, place cheese on top of the eggs, cover the pan and remove from heat.

When the cheese has melted, place kimchi mixture over half of the omelette. Tip the omelette out of the pan, folding in half onto a plate.

Garnish:

  • sour cream
  • red chili threads
  • roasted sesame seeds
  • scallion curls

To make scallion curls, simply slice the green tops of the scallion into 3 inch lengths, then slice lengthwise into thin strips. Place strips in ice water until they curl.

Top the omelette with a small dollop of sour cream. Sprinkle with chili threads and sesame seeds. Scatter a few scallion curls.
