Marinated Purple & White Cauliflower Salad
Roasted Red Bell Pepper, Kalamata Olive, Scallion
Olive Oil, Lemon, Oregano, Parsley
I asked the florist to make 8 petite arrangements for my Thanksgiving table. This year in softer hues ~ focusing on green, yellow, brown and pink. For no other reason than I wanted a change from bright orange & red, and I happened to have candles in those colors. They were just delightful! And in looking through my holiday photos, the flowers looked curiously like the purple cauliflower salad…
Purple Cauliflower Salad Recipe
- one (medium-small) purple cauliflower, thinly sliced
- one (medium-small) white cauliflower, thinly sliced
- 1/2 c. chopped kalamata olives
- 1/2 c. whole kalamata olives
- 1/2 c. chopped roasted red bell peppers
- 1/3 c. finely chopped scallions
- 1/3 c. olive oil
- 1/4 c. fresh lemon juice
- 2 tsp. dried oregano
- chopped fresh parsley
- lemon wedges
- kosher salt and freshly ground black pepper, to taste
Toss all ingredients except the cauliflower, lemon wedges, and parsley. Then fold in the cauliflower, let sit at least 20 minutes to blend flavors. Garnish with lemon wedges and parsley.

This marinated cauliflower salad adds a light, fresh, crisp balance to the rich heavy holiday dishes. And it can be made a day ahead, which makes it a terrific choice for Thanksgiving. Simply remove from the refrigerator and re-toss. Add a bit more olive oil & lemon juice if necessary.

I love cauliflower salad and make it with some regularity — but ‘purple’ cauliflower salad is a whole other thing! What a beautiful plate for the table. Love it!
Cauliflower is just soo good to me. Purée, mashed, roasted, in soup and this! So gorgeous, as always. And of course they would have you come up with the arrangements!
